BANANA & ROLLED OAT BREAKFAST MUFFINS

Short on time and looking to create a simple, healthy snack that will store for a few days AND you’ll most likely have all the ingredients in your cupboard already? Then you must try this simple, Banana & Peanut Butter Rolled Oat Breakfast Muffins recipe, which serves 12 and is made in under 40 minutes!

 


Ingredients:

  • 3 ripe bananas, mashed
  • 3 eggs
  • 1 & ½ tsp baking powder
  • 3/4 Cup peanut butter
  • 1 tsp ground cinnamon
  • 1 tbsp honey
  • 1 scoop protein powder
  • 2 & ½ cups rolled oats
  • Spray cooking oil
Serves 12

 

Method:

  1. Preheat oven to 180°C (350°F).
  2. In a large mixing bowl, combine all ingredients and distribute the mixture evenly across a greased muffin tray.
  3. Bake for 15 - 20 minutes or until golden brown and cooked through.
  4. Remove from oven and let stand for 10 minutes.
  5. Remove from the tray and once cooled, store in an airtight container.
