
QUICK & BRUSCHETTA RECIPE

Whether looking to elevate your next gathering or looking for a yummy treat for yourself, you can't go wrong with Bruschetta. Cripsy, toasted bread, juicy ripe tomatoes, fragrant basil, and a touch of olive oil... Need I say more?

Ingredients:
- 1 baguette, sliced into 1/2-inch thick slices
- 3-4 medium ripe tomatoes, diced
- 1/4 red onion, finely diced
- 2-3 cloves garlic, peeled and halved
- Fresh basil leaves, chopped (about 1/4 cup)
- 2 tbsp olive oil (plus more for brushing)
- Salt and pepper, to taste
- Balasamic glaze, for drizzling
Optional Add-ins:
- Fresh mozzarella or burrata (if you'd like a creamy addition)
- A pinch of red pepper flakes (for a bit of heat)
- Parmesan shavings (for extra flavour)
Serves 4
Method:
- Preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet. Brush both sides of each slice lightly with olive oil.
- Toast in the oven for about 5-7 minutes, or until golden and crispy. Watch closely to prevent burning.
Tomato Mixture
- While the bread is toasting, mix the diced tomatoes, onion, and chopped basil in a bowl. Drizzle with 2 tbsp olive oil and season with salt and pepper. Stir to combine and let it sit for a few minutes to allow the flavours to meld.
- Once the bread is toasted, remove it from the oven and rub the cut side of a garlic clove over each slice. This adds a subtle garlic flavor without overpowering the bruschetta.
Assembling the Bruschetta
- Spoon the tomato mixture evenly over the toasted baguette slices. 7. Drizzle each bruschetta with balsamic glaze for a touch of sweetness and acidity. If you’re adding mozzarella or burrata, place a small amount on top before the balsamic drizzle.
- Garnish with a few more fresh basil leaves or Parmesan shavings if desired, and serve immediately while the bread is still warm.
